I saw a couple versions of pull apart bread on Pinterest and thought I’d give it a try. Melted cheese and bread… sign me up!

To make the pesto I toasted a handful of pine nuts on the stove and threw them into [my] mini cuisinart with a ton of basil, 3 cloves, a chunk of parm, a little bit of spinach, a few tablespoons of olive oil, and salt & pepper. I emphasize the MY, because Rob gave me a TON of greif for buying the thing, and now uses it more that I do. I love kitchen gadgets. Especially mini ones.

I  sliced the [delicious multigrain] bread both lengthwise and crosswise (not all the way through), brushed the pesto into the crevices and sprinkled in a ton of part-skim mozzarella. I wrapped the whole thing in tin foil and popped it in the oven (at 350) for 20 minutes, uncovered the top and left it in for about 15 more minutes (until the cheese was melted).

We finished half of it in about 3 minutes.
